August in a Bowl
- 1 baguette, or other crusty French bread, cubed
- 2-3 pounds tomatoes, all colors, chopped
- 1/2 cup chopped basil leaves
- 1 large ball fresh mozzarella, cubed
- splash of balsamic vinegar
- olive oil
- salt and pepper to taste
- 1/4 cup Parmesan, grated (optional)
- kernels from 2 ears of corn (optional)
Combine all ingredients in a large bowl and mix well, until the bread has soaked up the juices from the tomatoes, oil, and vinegar. Let set 5-10 minutes before serving. Invite lots of friends over. Savor.
