August in a Bowl

  • 1 baguette, or other crusty French bread, cubed
  • 2-3 pounds tomatoes, all colors, chopped
  • 1/2 cup chopped basil leaves
  • 1 large ball fresh mozzarella, cubed
  • splash of balsamic vinegar
  • olive oil
  • salt and pepper to taste
  • 1/4 cup Parmesan, grated (optional)
  • kernels from 2 ears of corn (optional)

Combine all ingredients in a large bowl and mix well, until the bread has soaked up the juices from the tomatoes, oil, and vinegar. Let set 5-10 minutes before serving. Invite lots of friends over. Savor.
