CSA Fall Newsletter: November 14th, 2022 (Week 2/7)
Howdy Folks,
I realize I often make a comment on weather so….It’s snowing! There is a gentleman that shops with us at the market that said a couple weeks ago that he hasn’t seen a snowflake in 20 years. I could fall into that camp, although there is still a lot of work to do and vegetables to harvest so I think we’ll stick around and get a little toughened up in all this cold.
We had a low of 27 degrees last night. We have a lot of vegetables in the field like lettuces that are just a little too small to harvest and although we have the vegetables covered with a floating cover, they can only take so much cold until they’re damaged. This is why we prefer to build greenhouses without heat to grow late vegetables. There is an immense amount of relief to know that we’ll not have to dig into some inches of snow to find the vegetables we’d like to harvest. Instead, we’ll just go inside the structure where there is cold, but no snow and we can focus on harvesting and not focus on snow.
We’re thinking about many things for the following season and one of them is building another big greenhouse to extend the season in both the spring and fall. This would dramatically increase the diversity, quality, and quantity of the vegetable options we currently have. It’s pretty exciting and it’s a lot of work.
We don’t want you all to feel overwhelmed with root vegetables throughout the Fall CSA. Sweet Potatoes can be stored in a dark cabinet in the house somewhere where it may be cooler. Potatoes too. Carrots, turnips, beets, etc can all be stored in a plastic bag with some holes poked into the bag in the refrigerator.. The idea is that these vegetables are still alive and require oxygen but they are susceptible to dehydration. You can effectively store these root vegetables for months.
