CSA Summer Newsletter: October 10th, 2022 (Week 20/23)

Howdy Folks, 

Soup…

Before we get to soup I should mention that it is absolutely fall.  We went from no frost to freeze!  That’s never happened before to us but we prepare all the same so it’s fine.  The Basil isn’t fine, which is predictable.  Whichever cold sensitive plants that are outside are either cooked or showing lots of stress/damage.  On our end, we do not sell damaged vegetables intentionally so all the veggies in the field damaged will now become worm food and incorporated back into the soil.

The cold brings me back to soup.  Fall has some of the best vegetables in regards to making soup.  I’m super happy to offer you celeriac this week.  Celeriac is the celery plant that invests energy downward to make big delicious roots instead of upward to make typical celery.  Use the root like you use potatoes. You can roast, mash, steam, or throw it in soup.  A perk is that the tops can be used just like celery.
