Chard
Nutrition Information:
Chard is related to beets and spinach. It is a good source of Vitamins A, C, and K, and is rich in magnesium, iron, and potassium. Containing high levels of Vitamin K makes Chard beneficial for reducing blood pressure.
Storage Tips:
Store in a plastic bag in the fridge. Rinse before use. Cook the stems a little longer than the tender greens, as the greens just need 5 minutes to wilt. The stems of chard have all the natural colors that are good for you! To freeze, blanch, and then add to a freezer bag.
Uses:
Chard is yummy steamed or sauteed, pan fried, used in soups, stews, and casseroles, or added into quiches. Large stalks can be pickled. Chard is also great for making pesto.
