Onions are composed mainly of water, carbs, and fiber. The fructan fiber in onions can be great for digestive health. They also contain vitamin C, folate, vitamin B6, and Potassium. Red and yellow onions contain high amounts of antioxidants. These root veggies are good for regulating blood sugar, and are also useful when fighting a common cold.

Storage Tips:

Leave onions unpeeled in a cool, dark place such as a pantry or cellar. If stored properly, they can be kept for up to 6 months. Chopped onion can be kept in the fridge for up to a week. Onion can also be frozen, peel and chop and place into a freezer bag with as much air kept out of the bag as possible.

Uses:

Onions can be used in a variety of recipes to add flavor, however, they can also be the star of the show. Onion tarts and onion soup are delicious options when you have quite a bit of onion. Pickled onions (particularly red) are delicious in salads and on sandwiches. Raw onion is also good added to sandwiches and salads.
