Potatoes are a member of the nightshade family. They are a good source of Potassium, Folate, and Vitamins C and B6. They are not a significant source of fiber unless eaten regularly, and most of the fiber is in the potato skin. The skin also contains the majority of vitamins and minerals.
Storage Tips:
Store potatoes in a cool, dark place such as a cellar or pantry with good ventilation (a mesh bag or basket). Potatoes can store well for a couple of months if stored properly. To freeze, chop, and cook or partially cook, and freeze on a baking tray, Once frozen, transfer to a freezer bag.
