CSA Summer Newsletter: July 25th, 2022 (Week 9/23)

Howdy Folks,

Yep we are still celebrating the rain, and now the summer veggies are starting to flow in.  Carrots, Beans, Eggplant, and tomatoes and cucumbers, we are now starting to pick from the field now, not just hoophouse tomatoes and cucumbers now. 

In your box this week you may pull out a cooking green that has a little pinky purple to its leaves.  This is Amaranth AKA Callaloo.  It’s delicious and we love it, as it loves the summer heat unlike Kale and Spinach.  So between Swiss Chard and Callaloo we can still keep you in the cooking greens in the heat of the summer.  Cook Callaloo just like you do swiss chard, mostly braising or sauteing.  Although they are also an excellent addition to soups.  You will find most recipes for this under the word Callaloo.  You can use Callaloo for beans and greens, or also just saute with the oil of your choice and garlic, and serve on the side.  It’s especially famous for an essential ingredient in some stellar caribbean dishes.
