Spring CSA Newsletter: May 21st, 2024
Hi Folks,
This is the last week of the spring CSA! The last five weeks have flown by, and we are busy preparing for the start of the Summer CSA next week. There is a lot of planning and prep work that goes into each season, but we are all excited for it to begin, and for the abundance of tasty produce we have to look forward to in the coming months.
Thank you for joining us for this spring season, and enjoying all of the fresh greens we sent your way. During the early weeks of spring, it's easy to notice the growth of the plants throughout the weeks. Since the start of the CSA, the kale has almost doubled in size, and the leaves on the radishes are much fuller than before!
A little tip for radish greens: Cut them from the roots ASAP after picking up your share, and store them in a plastic bag in the fridge. This way, the greens don't drain all the moisture from the radishes, and they'll stay crispy and fresh for longer. Radish greens are great eaten fresh with a salad, or sauteed in a pan.
Today, Aeros is driving out to Newport, PA to pick up the pigs that they'll be raising this year. Right now they are still small, and of course, very cute! (We'll be sure to send some photos soon). While living on the farm, the pigs eat a mixture of pig feed and leftover veggies that don't make it into the CSA shares or to the Markets. Last year, the pigs ate lots of sweet potatoes and butternut squash, and they grew to be about 300lbs! These new pigs will eventually grow to a similar size from eating tons of delicious veggies.
There are also chickens on the farm. Just a few weeks ago, they were tiny peeps snuggled under a heat lamp. Now, they are outside stretching their wings and enjoying the sunshine and fresh air.
