Cauliflower is a part of the Brassica family. Cauliflower is a low-calorie nutrient dense veggie, high in vitamins and minerals, particularly Vitamin C, K, and folate. It is also a rich source of fiber.
Storage Tips:
Store in a loosely sealed bag or perforated plastic bag in the fridge. Cauliflower prefers air circulation. To freeze, cut head into small pieces and blanch. Freeze on a baking tray, and once frozen, move to a freezer bag.
Uses:
Roast Cauliflower in the oven, add to soup, mac and cheese, or blend into sauces. Cauliflower can also be used as a substitue for rice or pizza crust. Using chunks of fried cauliflower as a vegan replacement for wings is also popular.
