Eggplant is considered a nutrient-dense food source, and is packed with minerals, vitamins, and antioxidants. Eggplant is high in vitiamins A and C and is also a good source of fiber.
We grow Fairytale Eggplant (the mini variety), Italian Eggplant, and Asian Eggplant. The storage tips and nutrition information are similar between all three varieties.
Storage Tips:
Eggplants like cool temperatures, but the firdge can often be too cold, so if you can store it in a cool, dark room such as a basement or garage, this is best. If it needs to be in the fridge, wrap it in a few layers of plastic wrap first. Eggplants should stay fresh in these conditions for about 4 days. You can also chop and freeze eggplant.
Uses:
Eggplant can be sliced and grilled, used in eggplant parm or chopped and roasted and added to rice and pasta dishes, roasted or grilled and added to salads, or simply tossed in some butter or oil with a sprinkle of seasoning and roasted in the oven.
