Storage Tips:

Store your beets in the crisper drawer, unwashed until you are ready to use them. Chop off the stems and store these in the fridge for up to three days. To freeze beets, boil them for about 30 minutes, then transfer to an ice bath. Once cool, peel off skin and cut into uniform pieces. Place in a freezer bag and store for up to a year. Pickling beets is another delicious way to store them.

Uses:

Oven roasted beets are always an easy go-to for a dinner side, but beets are delicious in many ways. Use them raw in salads, blend into soups, smoothies, or hummus. Beets are sweet and make a great pair with apples or goat cheese. Just be cautious while cooking, as the red beets can stain cookware, clothes, and even hands pink!
