Rhubarb is a vegetable often categorized as a fruit, with a sour-tart flavor. It is rich in vitamin K, and also contains small amounts of calcium, vitamin C, and Potassium. It is a good source of fiber.

Storage Tips:

If you plan to use your Rhubarb within a couple of days, it can stored on the counter in a cool, dry space with good air circulation. You can also store it in the fridge, trim the excess leaves and then wrap the stalks in a breathable plastic, in the crisper drawer. To freeze, chop the rhubarb into 1-inch pieces and blanch, then freeze on a baking tray.

Uses:

Rhubarb is often sweetened and added to pastries and sweets, or made into jams and syrups.
