Bok Choy is particularly high in Vitamins C and E. It is also sometimes called Pak Choy, and is related to cabbage.
Storage Tips:
Place the Bok Choy in a plastic bag that can be loosely sealed, and keep in the crisper drawer for up to 6 days. Do not wash Bok Choy until you are ready to eat it to prevent wilting from excess moisture. Bok Choy can be frozen, although this takes away some of the flavor. Blanch, then dry completely, and place into a tightly sealed freezer bag.
Uses:
Bok choy is often used in soup, stir fry, salads, and dumplings. It has a mild flavor and is also delicious when sauteed with garlic and oil.
