Broccoli is a great source of Potassium, Vitamin C, and Vitamin B6. It is a member of the Brassica family. Raw broccoli consists of about 90% water, and is high in fiber, making it good for digestive health and thyroid.

Storage Tips:

Broccoli stores best with air circulation, so place it into an open plastic bag, or one with holes, and store in the crisper drawer for 3-5 days. To freeze, blanch broccoli, and place into a freezer bag. Will last 10-12 months in the freezer.

Uses:

Roast your broccoli in the oven with some garlic and parmesan cheese, steam and add to pasta, boil, add to quiches and veggie pies, use shredded stems in coleslaw, and so much more. Broccoli can also be quickly cooked in the microwave- add chopped pieces to a bowl or large mug, cover with water, cover the bowl with a plate, and microwave on high for 1-2 minutes. Simple and easy!
