Collard Greens
Nutrition Information:
Collard greens are rich in Potassium, which helps regulate your heartbeat and balance the effect of salt on your body. These greens won’t cause your blood sugar to spike after eating, and are packed with antioxidants.
Storage Tips:
Collard greens won’t store for very long. Stick them in the fridge unwashed, in plastic bags in the coldest drawer. Try to use them within one or two days for the best quality. They can be frozen. Wash thoroughly, then blanch in boiling water for 2 minutes, and cool in ice water. Drain on paper towels, and freeze in a freezer bag. Cook for 3-5 minutes unthawed with butter or a splash of water.
Uses:
Add your collard greens into a soup or stew, puree into sauces and pesto, add to salads and coleslaws, or mix into a stir fry.
